Steak Salad

Don’t forget the greens!  We sure love steak, but it’s important to achieve a balanced diet.  This recipe combines Crooked Creef Beef and more a few tasty items from the rest of the food pyramid.

Makes: 4
Prep Time: 45 minutes
Cook Time: 45 minutes

Ingredients

  • 1/3 cup worschestershire sauce
  • 2 tbsp soy sauce
  • 1 tbsp dijon mustard
  • 1 tsp salt
  • 2 tsp pepper
  • 1 lb sirlon steak
  • 1 head romaine lettuce

  • 1 head green leaf lettuce

  • 1 red onion sliced thin

  • 1 large tomato chopped

  • 1/2 cup blue cheese crumbles

  • Favorite salad dressing to taste

Instructions

Combine first five ingredients in gallon plastic zip-top bag, mix thoroughly. Score surface of steak, place in marinade bag and refridgerate for 1-2 hours.

Grill steak on indirect heat for 4-8 minutes each side according to preferences, let steak rest in foil for five minutes prior to slicing. combine lettuce, onion, and tomato, top with steak, cheese and salad dressing.

Party Meatballs

One of our family’s favorites!  These meatballs are perfect as a starter or as the star in a family meal.

 

 

Makes: 6
Prep Time: 10 minutes
Cook Time: 1 hour

Ingredients

  • 1 lb ground beef

  • 1 cup oats

  • 1 egg

  • 1/2 cup chopped white onion

  • 1 tsp salt

  • 1 tsp fresh ground pepper

Sauce:

  • 1 1/2 cup catsup

  • 3/4 cup brown sugar

  • 1/2 cup chopped white onion

  • 2 tbsp mild minced garlic

Instructions

To prepare meatballs mix all ingredients together thoroughly. Shape into quarter diameter balls and place into a single layer in a casserole dish or cake pan.

Mix all sauce ingredients together and microwave on low power for one minute to dissolve brown sugar. Pour all sauce over the meatballs and bake for one hour in a 350 degree oven. Recipe serves 6 as an appetizer.

Toms Winter Stew

Prep Time: 30 minutes + overnight marinating
Cook Time: 1 1/2 hours

Ingredients

1 lb Beef Stew Meat (trimmed of fat)
1 lb Pork Shoulder (trimmed of fat)
1 lb Veal Stew Meat (trimmed of fat)
6 peeled & quartered carrots
4 ribs chopped celery
6 peeled & quartered potatoes
2 bunches chopped green onions
3/4 lb sliced mushrooms
1 3oz package sun-dried tomatoes
1 tsp dried sweet basil
3 bay leaves
2 tsp cajun meat seasoning
1 1/2 tsp salt
3 crushed garlic cloves
1 tsp dill weed
4 cups dry red wine
4 tsp olive oil

Instructions

Place beef, pork, potatoes, carrots, celery, onion, mushrooms, tomatoes, basil, bay leaves, Cajun seasoning, garlic, dill salt & Red Wine in a large glass or ceramic casserole dish.  Cover place in refrigerator to marinate for at least 24 hours (the longer the dish marinates, the more flavorful it becomes).  With a slotted spoon, remove meat from the bowl. Reserve other ingredients and wine marinate.  Heat large heavy pot ; add the olive oil. Brown the meats in small batches over high heat.  Add reserved ingredients. Bring to a boil, and then lower the heat to a simmer.  Cook for 1 1/2 hours, covered, until the meats are tender. Season with Cajun hot sauce to taste. Serve in heated bowls with French bread.

Wine Suggestion: Dry Full Body Red Wine

Basic Lean Burger

The perfect basic burger recipe.

Ingredients

1# Lean ground beef
¼ cup soft bread crumbs
1 egg white
¼ teaspoon salt
1/8 teaspoon pepper
4 whole wheat hamburger buns split

Instructions

Combine ground beef, bread crumbs, egg white, salt and pepper in a bowl, mix lightly but thoroughly. Lightly shape into 4 ½ inch thick patties.

Place patties on grill over medium, ash-covered coals. Grill uncovered 10-11 minutes turning occasionally.

On buns, line bottom with lettuce leaf and tomato, top with burger and close sandwiches.
